Aging an Account - Unlike Wine it Only Gets Worse?


The term aging an an account can be understood by remembering this: Your credit history can be reported for seven (7) years from the first time you missed a payment and never got caught up. In a previous article, we touched on the term "initial delinquency". Both go hand in hand when we discuss the term "AGING AN ACCOUNT".

Remember, the Federal Law is emphatic. Someone can report a delinquent account for seven years from the intial delinquency. Many times, an original creditior will turn over or assign an account to a third party collection agency. Because the collection agency received the account much later then when it was first opened, they will very often report a new date of opening. In this manner, they think that they can report the information for seven years from the date of which the account was first placed for collection. This is very confusing for the average person and has caused many unsuspecting consumers to fail when qualifying for a mortgage.

It gets really confusing when the average consumer notices three or four different collection companies with different account numbers, different opening dates and no one reporting the intial delinquency date. Remember, the delinquency date of the original account. No one can change that date. Later on we'll discuss the "Statute of Limitations" and how it pertains to consumer debt.

Remember, when a creditor "charges off" an account he is merely writing it off for tax purposes. THIS DOES NOT MEAN YOU DO NOT OWE THE DEBT. You still owe on this bill. Keep that in mind. How often have we heard the statement "write it off for taxes"? What this means is that the IRS allows a company to recover a portion of bad debt by lowering the tax liability on corporate profit.

Occasionally, a credit report will show a charge off and still report the account as having a past due balance on the date the report was generated. This has been construed as "deceptive collection activity". The rationale from the debtor (you) is "how can I be past due on a charged off account"? Quite often, a violation of Section 623(a)(5) of FCRA occurs when the original creditor fails to report the intial date of delinquency.

Chill Champagne to approximately 45 degrees. Placing the bottle in a bucket with ice and water is ideal. Once the bottle is sufficiently chilled, cut around the bottle neck to cleanly remove the foil. Untwist the wire brace from the exposed neck and cover the cork with your thumb. Grip the cork with one hand as you slowly twist the bottle with the other. Ease the cork out as slowly as possible, releasing it with a hiss rather than a loud pop. While popping the cork may seem festive, it allows too much carbon dioxide and aroma to escape from the bottle. If the Champagne is not chilled enough, it will be very difficult to remove the cork without a violent expulsion. Place your thumb in the hollow (or punt) at the bottom of the bottle and support the bottle with your outstretched fingers. Pour the Champagne slowly into tall, flute-shaped glasses as not to create too much foam.

How to Clean Cloudy Wine Glasses


There's nothing that detracts from the enjoyment of fine wine like drinking it from a cloudy wine glass. Wine glasses should always be sparkling clear, especially if you are serving wine to guests.

Unfortunately, it's easy for even the best crystal stemware to develop a foggy look that is hard to remove once it has "set." The best course is to keep this from happening in the first place. But if you already have foggy wine glasses, there are things you can do to clear them up.

It should go without saying that you must always wash good crystal, including wine glasses, by hand, never in the dishwasher. Dishwashers get very hot, which is not good for crystal--it can cause it to develop fine cracks. Also, dishwasher detergent can "rough up" glass surfaces. Both of these can lead to a cloudy look over time.

When hand washing your wine glasses, use warm--not hot--water and regular dish detergent. Adding a little vinegar to the water will help keep the glasses from fogging.

If you have taken good care of your wine glasses, including washing them as described above, and they have developed a cloudy appearance anyway, it could be due to the condition of your water supply. Hard water in particular is prone to imparting a foggy film to crystal.

To remove cloudiness from glassware, soak the pieces in straight white vinegar for an hour or two. Then, hand wash normally and dry using a lint-free cloth. You might have to repeat the process two or three times before you can get all of the filminess off, but you'll agree it's worth it when your wine glasses sparkle again.

Writing about Rice Wine was indeed a spontaneous decision on my part. I solemnly hope that this was a wise decision that I had made.

Homebrewed Wine


When I was in college one of my old roommates used to like to brew his own beer. I always enjoyed watching him concoct his creations in our tiny apartment kitchen in Tallahassee and then watch over the coming weeks the water and sludge mixture turn into something more; to turn into a delicious tasting beer. I myself enjoy the occasional bottle but never enough to make my own.

Wine however, is another story. I?ve still yet to make my own wine, and I am not entirely sure why I have not attempted to. For first timers like me, it make more sense to purchase a wine making kit from a supply store because these kits have all the essential bits and pieces of equipment so you do not have to worry about forgetting to buy something.

Before getting started it is important to make sure that you have everything you need. Whether you are buying a kit or buying all the pieces individually, make sure that you have the following:

? Large nylon straining bag
? Food-grade pail with lid (2 to 4 gallons)
? Cheesecloth
? Hydrometer
? Thermometer
? Acid titration kit
? Clear, flexible half-inch diameter plastic tubing
? Two one-gallon glass jugs
? Fermentation lock and bung
? Five 750-ml wine bottles
? Corks
? Hand corker

Once you have the equipment it is important to pick your grapes. What grapes you use will depend to a certain extent as to what is available in your area. Vitis vinifera is the classic choice for flavour and character. It is a famous European wine-grape family that includes varieties such as Chardonnay, Merlot, Zinfandel and Cabernet Sauvignon. In the United States, to make a very broad generalization, vitis vinifera grapes thrive in California and the Pacific Northwest. However, they do also grow well in microclimates scattered all over the country. Don't be discouraged if you live in a colder area where you are less likely to find them. There might be other hybrids which grow near you, although if you are not sure your best bet is to ask a local produce wholesaler or order some grapes from a wine making store.

Once you have your grapes it is important to inspect them. Take a large handful or two of grapes, squish them and strain the juice. Take your hydrometer and measure the sugar level of the juice. The level should be around 22 Brix which or 11 percent potential alcohol. The fruit should taste sweet and ripe but also mildly tart. Make sure the grapes you are going to use have been thoroughly cleaned and all stems, leaves, insects or other bits of debris have been removed as this will ruin the flavour of the finished wine.

It is important to mention at this point that it is not necessary to use fresh grapes, many homebrew shops sell a grape concentrate that you can use as well so do not get discouraged if you can not get the correct kind of grapes for the wine you want to make, the concentrates are available in many verities and some have sugar already added so you do not need to worry too much about fooling around with the Brix.

Like beer brewing, it is extremely important to make sure that all pieces of equipment are clean and sterilized. Clean everything with very hot water and boil anything that can be boiled. There are a lot methods that can be used for sterilization, some people like to use a bleach and water mixture, others like to use a sterilization powder which can be purchased at your local wine making store. Regardless of what option you pick it is important to follow the instructions and make sure that everything is thoroughly rinsed clean afterwards. There would be nothing worse than having to throw away your batch of wine because it was tainted with bleach that didn?t get rinsed out.

It is important to check the sugar levels of your juice, and to double check the levels if using a juice from concentrate. Using your hydrometer, the sugar level should be about 22 Brix. If for some reason the level is not around 22 Brix, the level is quite simple. If the level is too high and needs to be lowered, it can be done by diluting with water or juice. To bring the level up you can make a sugar and water mixture should by boiling 1 cup of sugar with a third cup of water. Once this mixture is cool (do not add hot sugar to the juice) it can be slowly added until the proper levels have been reached.

Using your acid titration kit you will be able to adjust the acid levels. This is very important because red and white wines have certain acid levels, which are essential. A dry red wine for example should be between 6 and 7 grams per litre while a dry white is between 6.5 and 7.5 grams per litre.

Overall temperature of wine is also important and being able to adjust the temperature of your juice is something everyone needs to know how to do. Fermentation for red and white wines vary, the average temperature for reds is usually around 70 to 75 degrees Fahrenheit while whites fermentation is usually cooler around 55 to 65 degrees. If you find that your wine needs to be adjusted there are many methods that can be used. If trying to cool your wine the best method is to place a reusable ice pack from the freezer (if you don?t have these ice cubes in a zippered lock plastic bag will do the trick) into the juice and stir until the temperature is achieved. Take the pack out and continue as before. Warming wine can be a little tricky. Some people like to take a small amount of juice and warm it in the microwave before adding it back to the larger container of juice while other people like to wrap the juice bucket with an electric blanket. This second method takes longer but can yield a more accurate temperature as it is easier to control the warmth. Either method will work so it is more a matter of preference.

Transferring your wine from one container to another to separate the sediments is very important. Remember that the transfer container needs to be sterilized! Using a siphon hose (your clear tubing), slowly transfer the juice making sure to not to stir up the sediments and seal it with the bung and fermentation lock.

Bottling wine is similar to bottling beer. You fill your empty wine bottles with your wine, and use a hand corker to cork the bottle to seal it. This can be hard to do the first time so it is suggested that an empty bottle is practiced on first to get the hang of it. It is not important to purchase bottles if you have empty wine bottles at home you can sanitize and recycle those.

A common myth is that homemade wine is not capable of tasting as good as wine produced at a winery. The same methods are used to create wine at home as they are at wineries; the only difference is the size of the batches being made. Also don?t be afraid that making wine from home could cause you to go blind if it is not correctly made; this is another fallacy that people often believe to be truth. The alcohol made by the fermentation of sugar is ethyl alcohol not it?s deadly cousin methyl (wood) alcohol.

After doing this research on making wine at home, it appears that it is nowhere near as difficult or dangerous as many make it out to be. Perhaps in the coming weeks I will put my wine making skills to practice and make my first batch of vin de Finnigan.

Frost Bite - Ice Wine is More Than Just Frozen Grapes


One of the most rapidly growing trends in the world of wine seems to be with the rise in popularity of ice wines (or eiswein in German). This is interesting because these wines have been around for almost 200 years yet have not had much time in the spotlight until recent history. The most famous ice wines are from Germany, however many other countries such as Canada, Austria, and even Australia have been known to produce ice wines of their own. Because Canada is much colder and is capable of more consistent freezing temperatures has actually surpassed Germany in the production of ice wine.

Ice wine is a dessert wine that is made from frozen grapes. Only the water freezes in the grapes, so when they are pressed frozen, the juice that is extracted is very concentrated and very sweet. This freezing must happen before fermentation, and the grapes need to be pressed frozen, otherwise the water will melt in the grapes and you will not have the concentrated juice required for ice wines.

Natural ice wines require a hard freeze to occur after the grapes have ripened. In Canada, this temperature is a minimum of 17 degrees Fahrenheit while in Germany this temperature is 19 degrees. This means that the grapes must remain on the vines for several months after a normal harvest and risk being lost to rot if there is no freeze. At the other extreme, if the freeze is too severe the grapes can not be harvested and pressed. Because the fruit must be pressed while it is still frozen, pickers must work late in the night or early in the morning and work while the cellar workers must work in unheated spaces to ensure the grapes do not thaw.

Sometimes wine makers prefer to use cryoextraction. Cryoextraction is a mechanical freezing that is used to simulate the effect of the natural frost that occurs so that grapes can be picked sooner and made into wine. In Germany and Canada, wine created this way can not be called ice wine, only wines which have been frozen naturally are allowed to be called as such.

Whereas regular wines might take days or weeks to ferment, ice wines can take months due to the higher sugar content. Even though it is normal for the sugar content in ice wine to run from 180 g/L up to as high as 320 g/L ice wine remains very refreshing because of the high acidity. Ice wine usually has a medium to full body, with a lingering finish while the nose is oftentimes reminiscent of peach, pear, honey, caramel, and green apples depending on the varietal grape. Pineapple, mango, and even lychee are quite common aromas with white varietals however this list is by far not exhaustive.

Because the juice from the grapes is more concentrated than regular wine, there is a much smaller yield. It is for this reason as well as the methods used that make ice wines more expensive than table wines. Ice wines can cost as much as $300 a bottle, which is why it is often sold in half bottles for as little as $50. Grapes that have insufficient brix (sugar) content can not be made into ice wine and are therefore usually sold under the label "special select late harvest" or "select late harvest" at a fraction of the price of true ice wines.

When to drink ice wine is a matter of personal taste. Some people believe that ice wine improve with age and supporters claim that the very high sugar level and high acidity preserve the content for years after bottling. There are then others who believe that with age the wine loses its distinctive acidity, fruitiness, aroma, and freshness. Being that ice wines are very versatile in this, when you decide to drink your ice wine depends on when you feel it tastes best.

Ice wines are becoming the latest trend in the wine world and it is easy to see why. Delicious and refreshing, ice wines are a delicacy and a testament to the skills of the wineries. More expensive than a traditional wine, it is not something that the average person can afford to purchase on a regular basis, but are an essential addition to a special occasion or meal.

We were lucky, recently, while opening a '78 cabernet. We weren't sure how good it would be - the bottle was a "find" in a purchased house. It was absolutely delicious. The next day we went to the Sharpe Hill Winery and were amazed to found they made an extremely similar wine. It had the "youthful" characteristics of the wine we had tasted. The single most important ability to develop when embarking on the adventure of wine tasting is to teach yourself how to recognize quality. When I was a very young sommelier, I had no mentor, no professional direction other than my own common sense. I was thirsty for the counsel of anyone with some depth of experience in wine. While working in a formal dining room, I had the privilege one evening of serving Andr� Gagey, the director of the esteemed Burgundy house Louis Jadot. With enthusiasm and innocence, I asked him "Mr.Gagey, could you please tell me how you taste wine?" To my eternal gratitude, he gave the question some thought and then answered: "When I first approach a wine, I always ask myself �Is this good wine?� And then at the end, again, �Is this good wine?� " I will always remember his kindness in giving me the best advice I�ve ever received on how to taste wine.
